The difference in power between a mellow 1000 (like R1) vs. peaky 600 (like your R6) is really not that impressive. Actually you'll corner slower on a 1000 due to the increased weight. You can't take corners WFO even on a modern 600. And this applies to the track, so assuming you give yourself 30% margin for error in the canyons you'll be nowhere near the top of the powerband.

What it leaves you with is just straight line performance and stunting; And for those activities you shouldn't limit yourself with liter bikes, but go directly to ZX-14 (skip the Hayabusa). And if you're an active bada$$ bikenight goer, you should of course get the baddest bike (the aforementioned ZX-14) to bling it out: with extended chromed swingarm and other goodies.

What I'm trying to say, if your bike is mostly for the street (including canyons) forget about power. Power is a myth. No modern sportbike, whether 600 or 1000, has too little or too much power. But they have different styling, features, ergonomics, geometry, and weight. My pick for the street would be the best-looking, most feature-rich and user-friendly. For the track it'd be the lightest (with satisfactory stability).

I did a test ride on the City-X and found it to be terrible. The engine doesn't match the chassy. The forks are sloppy at best, even when tightened up, the back brake was vague until it locked the rear wheel (which can be fun). It wasn't fun at ALL until I started pushing it like a dirtbike. Even then the engine is still agrivating.
Yes I can ride dirtbikes (grew up on them), and I do like the motards as I have the hypermotard.
I like my R6 on the track ...

I'm gonna second this opinion. No offense but you totaled your R6 because you dont yet have the skills to handle a fast bike in the twisties. A liter bike is going to do nothing but make that worse. I followed you for a while on Montezuma before I found a spot where my little 400cc 45hp bike could pass you, and you're not a bad rider, but you aren't even coming close to the potential of a 600, and shouldn't even be considering a liter. Montezuma is a pretty open, fast road. If you were truly outgrowing your 600 I shouldn't have had a prayer of passing you on the lawnmower.

I agree that the guy is a relatively new rider, but canyons shouldn't be the place to judge someone's riding skills. He could be chilling, cruising, taking it easy, or just tired and dehydrated (his own explanation). I give him props for NOT using full 600's potential on the street. So those displacement wars (passing a bigger bike on your older smaller bike) mean nothing on the street. On the track, hell yeah, I'd (and do) laugh at all the posers on literbikes.

Dragging knee in the canyons or on on-ramps is OK once in a while, but most of the time it's perfectly fine to chill especially if you're not feeling it. Now let's leave alone his wrecked R6. It's just a regular mass-produced sportbike. One case I do support is if you have a highly customized or special edition bike with mods, stickers etc. like a Repsol 1000RR or special paint scheme Ducatis, or just top of the line Ducatis in general, MV Agusta, or anything of that caliber, then yes, you better not have chicken strips cause whether you realize it or not you're making a statement with such bike.
